Using up the bluberries - Blueberry coffee cake

Two days later and I'm still munching on the blueberry coffee cake I whipped up on Thursday morning. I love this recipe because it's simple and can be pretty much adapted to any kind of fruit you have on hand. In this case, I had some leftover blueberries from Applecrest Farm from earlier in the week. You can either leave the top streusel-like or you can turn up the heat a bit and slightly caramelize it.
